Mermaid Beach Bowl

Yield: 2 servings



2 cups cooked sushi rice, using package instructions
2 4-oz. salmon filets, fully cooked
2 cups red cabbage slaw (subrecipe below)
1 cup quick-pickled blueberries (subrecipe below)
½ fresh avocado, cut into 6 slices
½ cup Rowdy Mermaid Living Ginger™ Vinaigrette (sub-recipe below)


Build each bowl in the following order:

1 cup cooked sushi rice

1 cooked salmon filet

1 cup red cabbage slaw

½ cup quick-pickled blueberries

3 slices fresh avocado

~¼ cup ginger kombucha vinaigrette drizzled over entire bowl



Sushi rice can also be topped with Nori flakes (a.k.a. seaweed) added to the cooking liquid. Nori flakes can be found at most Asian and specialty grocery stores.
